Baked Oat Muffins - syn free

Baked oats are my go to breakfast, I make them for friends every day and often use them as a form of food bribary!

There are so many flavour options you can choose from,  I've listed a few at the bottom of this page (please scroll down) but there's always more you can try to suit your taste.

The basic mix will make six large muffins which is your HEB for the day (yes, all six!).  YOu can also make mini baked oats for taster or party nights.  The same basic mix will give you 24 mini muffins.


Ingredients for the basic bun mixture:
40g oats (your heb)
1.5 tablespoons syn free sweetener
2 eggs
1 Muller Light (any flavour you like)
1 teaspoon essence (flavour to suit your muffin choice)


Method
Preheat the oven to 180 or gas mark 6
Beat the eggs and almond essence together, add the oats and sweetner and mix well
Add the Muller Light and mix until it's pretty much a batter
Put six silicon muffin cases on a baking tray (I use these not paper as the mix will stick to paper)
Spoon the mixture into the muffin cases so they're evenly filled

Drop your flavour onto each muffin
Drop your 'flavour' on the top.  I used 1/3 teaspoon per muffin and did three jam and 3 Nutella as a taste test!

If you want to make into cupcakes you can make a quark icing:

1 tub quark
1 packet whote chocolate options (2 syns)
1 heaped tablespoon syn free sweetener

Mix it all together and spoon or pipe onto the cool muffin.  It tastes like a creamy icing!

UPDATE:  I've started putting my filling in the 'middle' of the cake as I've found that the jam can cook out when dropped on the top.  To try this just put a spoonful of the mixture in the bottom of the muffin case, your filling and then the rest of your muffin mix on the top.  Try not to get it at the edge of the cake as it pops out the side then but this way does mean you have more jam or nutella after baking!

Flavour Options:

I've tried several different flavour combinations and have to say that none are terrible (uh oh) but here's a few of my favorites so far:

Bakewell:  Almond essence and cherry yoghurt - this version is syn free

Bounty:  Vanilla yoghurt with chocolate sprinkles, coconut essence and dark chcolate syns (they must be synned)

Coconut Macaroon:  Use coconut essence and yogurt with a dollop of chocolate spread (same as Nutella but without the nut flavouring!!)

Christmas cake:  Yes, these taste EXACTLY like rich fruit cake...toffee Muller Light, salted caramel essence, a teaspoon of ground mixed spice and raisins - absolutely delicious!

Gin & Tonic:  Vanilla Muller light, gin and tonic flavourng and a squeeze of lime if you like.  Top with quark icing and a twist of lime

Lemon:  Use lemon essence, lemon fat free yogurt and lemon curd - you could do an icing drizzle for mini lemon drizzle cakes too

Lemon ginger:  Use a vanilla yogurt, teaspoon lemon essence and heaped teaspoon of ground ginger (that is to taste mind you - I like ginger!).  These are syn free 

Orange:  I use a chocolate orange Muller light (syn free) and some orange essence...that's the syn free version, if you want to jazz this up make the orange choc chip muffins by adding dark choc chip chunks to taste - just don't forget to syn the chocolate...if you make these try them warm when it's still melty - absolutely delicious!! 

Pina Colada:  Vanilla Muller Light, coconut essence and a little chopped pineapple 

Prosecco:  Vanillla Muller Light, prosecco flavouring, I pop a raspberry in the middle of each too!  Top with quark icing and a raspberry!

Raspberry surprise:  Put the jam in the middle and add a raspberry too, I use almond flavoring with these like a bakewell muffin

For the extras here's a few syn values - be careful when you add things like Nutella as it makes your syns creep up....I save those ones for a treat.

1 tablespoon Nutella – 4 syns
1 tablespoon standard jam – 2 syns
If you add fruit the syn count is different depending what you use but 100g cooked blueberries is 2 syns and cherries would be 2.5 (that's if you syn cooked fruit which I do not!)
