Baked salmon with stir fry veg and julienned courgette


This meal is totally syn free (yay!)

Ingredients:

Salmon fillet
Chilli flakes
Soy sauce
Oyster sauce
Garlic Fry Lite
Red onion
Pepper(s)
Courgette
Garlic
Chilli
** you can use whatever veg you like, this is just what I had in the fridge! **

Method:

Pre heat oven to 180 or gas mark 6/7

Place the salmon fillet on a piece of kitchen foil and sprinkle on chilli or dried chilli flakes (whatever you have in the house), add a good drizzle of soy sauce and give a squirt with garlic fry light.  

Loosely wrap the fish so it looks like it’s a Cornish Pasty shape which gives the salmon room to cook in its own steam.  Bake for 15 minutes

After 15 minutes open the parcel up so the salmon can be cooked through, you’ll want to cook for about 10 more minutes depending on the size of your salmon fillet

While it’s cooking, chop your veg

Spray a wok or frying pan with garlic fry light and add all the veg, everything except the courgette.  I have a julienner (if that’s a word?) which is like a potato peeler that makes juliennes, before I got that I rocked it with a normal potato peeler which was more than acceptable although aesthetically I like the juliennes better.

Once the veg starts to cook through add some soy sauce and oyster sauce.  I add a couple of tablespoons of each I’d guess....not too much as I don’t want to overpower my dinner but the flavours compliment the finished salmon.

When you have about 4 minutes left add the strips of courgette and a little water, maybe a couple of tablespoons and give everything a good mix up.  You’re aiming for slightly al dente with a light coating of sauce.

Once your salmon is cooked (if you’re unsure just look at the side to make sure it’s changed colour or press lightly with your finger for firmness) spoon your veg onto your plate.  Turn the salmon upside down on the foil and remove the skin, throw away and in the cooking foil packet flake the salon, this way you coat it in all the cooking juices.  Once it’s flaked, place on top of your veg and you’re done.  

A fresh, healthy, filling meal cooked start to finish in 25 minutes.
