This makes 8 muffins which is two portions
These are a treat, perfect for the days when you want chocolate for breakfast and nothing else will hit the spot. For someone who doesn’t have a sweet tooth I think that happens more than I truly care to admit! So use the 3 syns and have four huge muffins and know you’re still on track plus you’ve had a choccy fix!
Ingredients:
4 weetabix
1 banana custard muller light
4 tablespoons fake sugar (any type)
2 ripe bananas squashed up
50g choc chips/chunks
2 eggs
1 teaspoon vanilla essence
1 tablespoon ground ginger
1 heaped teaspoon ground mixed spice
Method:
Squash the weetabix in a bowl until they're like a powder
Add the sugar
Add the vanilla, ground ginger and mixed spice
Put the yogurt in and give a good stir

Lightly beat the eggs in the yogurt tub and add to mix,
stir
Gently stir in squashed bananas and choc chunks
Divide into 8 cases.
I use silicone as the muffins can stick
Cook at gas mark 6/180 for about 30 minutes turning after
20 if necessary
Leave to cool before eating (and you must or they do
stick!!!)
