Weetabix Muffins

Syn free if using as your Healthy B

I absolutely swear by these Weetabix Muffins....I make a batch every couple of days and have them with fruit for my breakfast.  It feels a bit like having bread, which is good (!), they're portable and when I'm having my breakfast I don't have to worry that every interruption means I'll come back to a bowl of sloppy Weetabix.  Plus it saves my healthy A for extra coffees or some cheese...perfect!

Ingredients:


4 weetabix
1 muller light (any flavour)
4 tablespoons fake sugar (any type)
3 eggs
1 teaspoon vanilla essence
1 tablespoon ground ginger
1 heaped teaspoon ground mixed spice

Method:

Squash the weetabix in a bowl until they're like a powder
Add the sugar
Add the vanilla, ground ginger and mixed spice

Next add the Muller Light, experience tells me it doesn't make any difference what flavour you use, you can't taste it so I use toffee as I don't really like them.  I'd avoid the ones with the fruit bits in though as that would probably be nasty.

Crack the eggs into the empty Muller Light pot and beat lightly to make sure you get all the yogurt.  It looks a bit of a mess but go with it:


Divide into 8 portions.
I use silicon bun cases so they don't stick, but I'm guessing non-stick cases would be just fine.
One portion is 4 muffins:


Bake at gas mark 6, or about 180 degrees for 35 minutes or until slightly golden on the top.
These muffins are good warm or cold.
I tried freezing them and they're ok.  not great, just ok...I prefer to make them fresh.

Flavour variations:

Orange and Ginger
Swap vanilla essence for orange essence, use a little less mixed spice and a little more ginger powder.  Everything else stays the same.....

Apple and Blueberry
Chop apple up small and sprinkle over a little lemon juice to stop it going brown.  Put this and the blueberries in at the end, mix gently to divide through the muffin mix and bake until golden.  they're a little squidgy with the blueberries but still really good!

Banana Walnut
Ahh a squashed banana and walnuts to taste, I often put a couple of bit son the top of the mufin so I can see them and they don't get lost in the mix - plus it stops me having five nut free cakes and one with them all!!

Carrot Cake
Coarsley grate 1 large carrot and add to the mix with 1 heaped teaspoon of ground mixed spice.  You can also add sultanas and/or walnuts - just syn them as appropriate.  It's like having five carrot cakes for breakfast!!
