Makes at least 8 slices - less than one syn per slice
If you use canned fruit that needs counting too, this terrine was 1.5 syns per (huge!) slice
This terrine is super simple to make and a really
impressive, very low syn pudding. Don’t
be put off by the amount of time it takes, each layer needs 20-25 minutes or so
to set but you can be doing other stuff as it’s in the fridge.
2 sachets sugar free jelly crystals (any flavor)
4 sachets gelatin
2 Muller Light (any flavor that goes with the jelly)
Fruit (chopped or sliced as appropriate)
Line a loaf tin with cling film, this will allow you to
easily remove the finished terrine
Layer fruit across the bottom of the loaf tin. Remember that this will be the top of the
terrine so whatever pattern you can make is what you’ll see when you serve the finished
dessert
Make up one sachet of jelly crystals with 400ml boiling
water
Add two gelatin sachets and dissolve
Gently pour 250ml of the mixture over the fruit, be
careful not to move the fruit you’ve just arranged!

Put the terrine in the fridge for 20-25 minutes until
just set
Add a Muller Light to the remaining 150ml jelly mix and
stir well
Take the terrine out of the fridge and add the Muller
Light/jelly mix. Return to the fridge
for 20-25 minutes until this layer is set

Take the terrine out of the fridge and add another layer
of fruit, this is the middle of the terrine so it doesn’t have to be as perfect
as the top
Make the jelly up as before, with 400ml of boiling water
and two sachets of gelatin and gently pour 250ml of the mix on the fruit making
the third layer. Back into the fridge
for 20-25 minutes until just set

Add the second Muller Light to the jelly mix and pour
over the terrine making the fourth layer
Put it back in the fridge until you want to serve. I’d give it another hour at least
Gently put a plate over the terrine and turn upside down, the terrine will come out of the laof tine easily, peel the cling film off and voila, all set!
