Easy One Pot Salmon and Roast Veg

This is syn free and absolutely delicious!

I tried this because (a) I love salmon and (b) I don’t always want to have a stir fry.  OK, there may be an element of (c) I hate washing up creeping in as well but I’m not leading with that!

This meal is insanely easy and healthy and going to be a regular dinner for me moving into winter.  You can customize it with whatever combination of veg you like, these were just what I had in the house.

Ingredients:

I fillet of salmon per person
Baby new potatoes
Red onion
Mixed peppers
Garlic
Mixed herbs
Crushed chilli flakes
Lemon juice
Garlic fry Lite

Method;

Pre heat the oven to about 180 (gas mark 6-7)
Cut the potatoes into bite size chunks and spray with garlic fry lite, put I your pot with the peeled garlic.
Cook for 20 minutes.
While the potatoes are cooking chop your veg.  I used red onions and peppers but you could use courgettes, aubergines, whatever you feel like.
After 20 minutes ass the bite sized veg to the pot and again spray with garlic fry lite.  Give everything a turn to mix it up. 
Cook for 20 minutes

Part roast veg to go with the salmon

Take the veggies out of the oven and turn, making a space in the middle for the salmon.  Put the salmon right in with the potatoes and veg.  Sprinkle dried chilli flakes over the salmon and dried mixed herbs over everything.    Give the salmon a good squirt of lemon and put the pot back in the oven for another 15-20 minutes.  You’re cooking until the salmon is just cooked through.


Add the raw salmon straight to the pot

Remove from oven and serve.

About 20 minutes until the salmon is cooked through

And serve!

It truly doesn’t get any easier or more convenient than that!
