Pork & Fennel Meatballs

This recipe makes 35 good sized meatballs, I love to batch cook and think might as well make more and freeze them for a work night or when I can’t be bothered to cook.  If this is too many feel free to halve the ingredients, everything else will remain the same.

The fennel is a really good Italian twist on pork meatballs and makes them super tasty which is a bonus as pork mince can be bland sometimes.

Ingredients
1kg 5% pork mince
4 crushed garlic cloves
3 tablespoons crushed fennel seeds
1 tablespoon chilli flake
1 teaspoon salt
2 tablespoons dried Italian herbs
1 teaspoon coarse ground black pepper
3 eggs

Method:

Pre heat the oven to gas mark 6 or 180 degrees

Crush the fennel seeds, I add all my spices and give them a grind so they’re evenly blended before adding to the pork
Crush the fennel seeds and mix all your spices together
Mix all the ingredients except the eggs in a large bowl, making sure that the herbs and spices are worked into the pork mince

Make sure the spices are evenly mixed into the pork mince
Add your eggs and stir through, the mixture should be quite wet.  If you need to add another egg a it’s a binding agent and will make sure your meatballs stay whole

Shape into meatball sizes, I tend to go for the size of a Ferrero Rocher but if you prefer more bite sized ones go for it!

Makes 35 syn free pork and fennel meatballs!
Place the shaped meatballs evenly on a lined baking tray and cook for 30-40 minutes turning halfway to make sure they’re browned

Theyre good straight out of the oven!!
Leave to cool

I serve this in my home made ragu sauce, it’s absolutely yummy, syn free and uses up pretty much anything you have spare!  The recipe for my red sauce is here, just pop the meatballs in the sauce with about an hour to go before you want to serve and let the meatballs warm and pick up the flavours of the sauce.

Try with courgetti spaghetti too for a totally syn free meal!

The meatballs will freeze absolutely no problem
