Cheese Scones – Syn Free!

These cheese scones are absolutely delicious served warm.  They’re a tweak, yes, but I don’t care…eating them didn’t make me gain which is pretty much all I can say!

I use a good amount of herbs in them and I might try making more using cheese and onion smash (3.5 syns per pack) and/or add finely chopped onion and bacon to the mix…both of which I think would be really delicious, will let you know…the syn free base recipe is here:


Ingredients:

1 packet original smash
1 tub fat free cottage cheese
3 large free range eggs
2 teaspoons mustard powder
1 tablespoon dried mixed herbs
30g red Leicester cheese (HEA) – if you use more you need to syn it a 6 syns per 30g!
Smoked paprika (optional)

You can add chopped up pre cooked bacon medallions for a cheese and bacon version

Method:

Preheat oven to 180 or gas mark 6

Blend the cottage cheese with the eggs using a hand blender

Put dry smash in a bowl (you do not make it up with water) and add your eggy/cheese mix, mustard powder and dried herbs.  If it isn’t binding quite enough add a tablespoon of water, but give it a good mix first to make sure, it kinda depends how big your eggs are

Mix everything together until blended and put on a baking tray, I lightly spray mine with fry lite.  To make my scones round I squash them inside a cookie cutter with a spoon - they look more 'scone-y' if that makes sense?

Lightly spray your baking tray with frylite and add, they don't spread too much but give a little room between them or you'll end up with one giant scone (there's an idea...)

Grate cheese over the top and sprinkle with more dried herbs if you like or I use smoked paprika for both the flavour and colour

Bake for 20-25 minutes until golden brown

Serve warm
