Chicken Yuk Sung

¼ syn per lettuce cup

Ingredients:

3 garlic cloves minced
4cm fresh ginger peeled and finely chopped
1 red chilli finely diced
2 spring onions finely slices
500g minced chicken or turkey (less than 5% fat)
Garlic fry lite
1 small can water chestnuts
1 tbsp dark soy sauce
4 tbsp oyster sauce

Method:

Heat a frying pan or wok and spray with garlic fry lite.  Add the garlic, ginger, chilli and spring onions, fry over a medium heat until lightly browned. 

Add the minced chicken and cook through.  

While the chicken is browning chop the water chestnuts into small cubes a couple of mm square
Put the chicken mix to one side

Add the diced water chestnuts to the pan with some garlic fry lite and cook for a couple of minutes to start the process

Add the chicken mix back to the pan along with the soy and oyster sauce and continue cooking at a medium heat until the meat is all covered and the sauce absorbed

Serve immediately on clean lettuce leaves 

(Can be made a couple of hours in advance and heated through before serving)

Serve immediately with lettuce
