These kebabs are really easy to do and a
huge hit at my house. They’re 2 ½ syns
for all four (that’s the honey) so less than a syn per kebab. They’re not quite sweet and sour, more sweet
and slightly spicy but the soy really deepens the flavor. Unlike a lot of recipes this has hardly any
ingredients and I’d recommend giving them a try.
Ingredients:
Pack of chicken thighs, all visible fat
removed and cut into chunks
1 tablespoon honey (2.5 syns)
4 tablespoons reduced sodium soy sauce
1 heaped tablespoon Cajun seasoning –
use more if you like it spicy
1 teaspoon garlic powder
2 peppers – any colour
1 red onion
Method:
Mix honey, soy, Cajun seasoning and garlic
powder in a bowl
Add cubed chicken and leave to marinade
for a least 4 hours
When you’re ready to cook the kebabs cut
your peppers and onion into chunks
Thread the chicken, peppers and onion
onto the skewers and place on a grill rack, if you have any spare marinade you
can drizzle it over the kebabs rather than throwing it away
I grilled the kebabs for about 5 minutes
to slightly blacken them, turning a couple of times then put them in the oven,
gas mark 6 for about 20 minutes or until the chicken is cooked through
Serve immediately with salad and wedges
(if you are using wooden skewers remember
to soak them in water for a couple of hours beforehand)
