Miso Salmon

This syn free meal is absolutely delicious and incredibly easy.  For anyone that hasn’t tried miso yet it’s a Japanese seasoning and traditionally bought in a paste.  I got mine from Tesco so it’s not hard to find, it was in the World Foods section and comes in a small jar.  It’s a very light flavor and quite salty, works perfectly with salmon.


Ingredients
1 teaspoon miso paste
1 teaspoon dark soy sauce
Salmon fillet

Serve with stir fried veg and or noodles

Method
In a small bowl combine the miso paste and soy sauce

Put the salmon on a piece of foil, skin side down and spread the miso/soy paste on the top

Gather the sides of the foil to make a parcel and put in a pre-heated oven at gas mark 6-7.  

Bake for 20 mins and then open the parcel, bake for a further 10 minutes.  If you have smaller pieces of salmon than in the picture bake for slightly less time

I serve this with stir fried veg and use the 20 minutes of the salmon bake to chop and dice all my veg, get everything prepped and put the plates in to warm.  When the beeper goes off and I open the salmon I start stir frying veg and getting it already so when my salmon is cooked it comes straight out of the oven onto a bed of just cooked veg.  You can serve this with noodles as well, it would be delicious.
