Deconstructed meatball and halloumi kebabs

Please note that halloumi is not syn free.   It needs to be your HEA or synned depending how much you use/eat! You can miss it out and just have the meatballs if you like but personally I like halloumi and it's good to have a little of wha you enjoy.

Ingredients:

1 packet slimming world syn fre meatballs
1 pack halloumi cheese (this needs synning or allocating as your HEA)
Roasted peppers (I roast my own and keep in the freezer but you can buy them from Tesco)
Cous cous
Spring onion for garnish

Method:

Bake slimming world meatballs in the oven according to directions

I always have roasted peppers and onions in the freezer.  You can buy them from Tesco and Iceland I believe but I make my own all the time, they freeze great.  Just defrost ready for the dinner and microwave for a couple of minutes or if you’ve bought them pop on the tray with the meatballs.

As the meatballs are cooking, cube some halloumi and dry fry in the pan (you need to syn this or use as your HEA).

When the meatballs are almost done, boil the kettle and make up cous cous as directed.  I throw in some chicken seasoning so it has a taste.  It takes about 2-3 minutes to cook but check your packet

Mix the roasted veg with the cous cous, put meatballs and halloumi on top, garnish with spring onion and hey presto.  You have super tasty deconstructed kebabs in about 15 minutes.
