Ingredients
6 scan bran (the blue ones)
1 weetabix
4 large eggs
2 large carrots grated
4 tbsp sweetener
3 tbsp mincemeat
2 level tsp mixed spice
Few drops of vanilla essence
Method
Break up scan bran and Weetabix, cover (only just, don’t
drown them!) with boiling water and leave to soften
While the scan bran does its thing, add the eggs to a
separate bowl and whisk for a few minutes until really light and bubbly. Add the sweetener, mixed spice, vanilla
essence and mincemeat and whisk again.
Next, peel and coarsely grate the carrots and add to the egg
mix. Whisk again (I put a tea towel over
the top of the bowl as at this stage bits have a habit of flying all over the
place!)
Your scan bran and weetabix mix should be softened and slightly
cooled. Squash with a fork to make sure there
are no dry chunks and drain off any extra water. Add to the carrot/egg slowly and again whisk,
with tea towel cover, until everything is blended well
Put the oven on gas mark 6
Spoon the mix into muffin cases, I use silicone muffin cases,
it makes about 18 or so and I try to dig down to the bottom of the mix to make
sure I get everything in each muffin. It
is a very runny, yukky looking batter but don’t worry, it will be fine and don’t
be afraid to fill the cases up
Cook for about 30-40 minutes, they will rise and brown
slightly but not a huge amount
Once cooked leave in the cases until cool before popping
them out.
