Syn Free KFC Chicken

This syn free chicken is delicious as well as being great both hot and cold on salads or for picnics.  It’s got a decent kick but not enough to scare anyone that doesn’t like spices!

I’ve made this recipe using quantities per person, so just multiply everything by the number of people/portions you need (and I highly suggest making extra for the fridge to nibble on!)

This also works really well as a coating on fish, I'd suggest a firm white fish or prawns.

Ingredients 

1 chicken breast cut into strips
50g plain cous cous
3 teaspoons garlic powder
1 teaspoon chicken seasoning
1 teaspoon dried mixed herbs
1 teaspoon mustard powder
1 teaspoon paprika
½ teaspoon cayenne pepper
Pinch cumin
Pinch black pepper
1 beaten egg
Frylite (I use garlic or chilli)

Method

Put cous cous and all the herbs/spices in a bowl.  Mix the dry ingredients so everything is blended and cover with boiling water, I tend to have it maybe ½cm over the top of the cous cous.  Leave for 5-10 minutes until the water is absorbed and the mixture cooled slightly

Beat the egg and add to the flavoured cous cous, stir through, you will have a slightly sticky mixture
Spray your baking tray with fry lite to stop the chicken pieces sticking

Take your chicken strips and coat with the cous cous mixture, don’t do it too thick, just enough to lightly coat your chicken

Bake the chicken for 25 minutes at 180, gas mark 6-7 until lightly browned and cooked through
You can serve with slimming world BBQ sauce when hot and they’re perfect on a salad or picnic when cold.
