Pork & Sundried Tomato Meatballs


I cannot claim inspiration for these meatballs, I saw them as a Weight Watchers pre made meal and though they would be a good idea.  I don’t eat pre-packaged food so I made my own – so I can’t tell you if they’re anything like the ones you can buy but I can tell you that these are surprisingly tasty and really, really easy to make!

I only added 5 sundried tomatoes and I didn’t weigh them.  25g of sundried tomatoes is 1.5 syns and I think this is about half that so I’m ging to say these meatballs are 1 syn for them ALL.  

Ingredients:
500g minced pork – 5% fat
1 egg
5 sundried tomatoes cut into tiny bits (use scissors it’s the easiest way to cut them)
2 tablespoons dried Italian herbs

Method:
Put everything in a mixing bowl

 Using your hands (sorry but you really need to) squish it all together until everything is evenly mixed through
 
Shape into meatballs – I got 12 from my mixture.  If you find they’re sticking just wash your hands, it helps a lot

Makes 12 meatballs
Leave to sit for about ½ an hour.  Resting them before cooking is a really good tip for meatballs and helps them keep their shape

Cook at 180 for about 30 minutes.  I turn them after 20 to make sure they’re browned evenly
I didn’t want to make a sauce with the meatballs as I wanted to snack on them, but if you do a quick passata with some extra sundried tomatoes, Italian herbs and some dried chilli flakes would be perfect.
