Chicken & Mushroom Pasta Crustless Quiche

This syn free meal sounds a bit weird but it actually works really well.  I’ve seen versions before but without the added meat, herbs and veg which I think makes a massive difference – it stops this from being an eggy bland blob.  You could use pretty much whatever combo you like, whatever you have in the house and want to use up and it’s a quick, cheap and easy meal to make.  You don’t  have to sprinkle it with cheese but I chose to and it was worth it but I hadn’t used my HEA for the day – you could syn the cheese too by working out the overall used and dividing by portion

Ingredients:
1 packet Batchelors Pasta n Sauce
1 chicken breast
Dried Italian Herbs
Mushrooms
Fry lite
5 eggs
Grated cheese

Method:
Pre heat the oven to 180 or gas mark 6
Make the packet of pasta up according to the instructions but only use water.  Where it says milk just use water – and no butter!

While the pasta is cooking chop up your chicken into bite sized chunks and sprinkle over dried Italian herbs to taste.  Spray your frying pan with fry lite and cook the chicken, adding the sliced mushrooms before it’s done to soften and lightly cook.  I like the meat and very to be slightly golden brown.  You can add onions, peppers, asparagus – whatever you like and have to hand, it will all work.

Put the pasta and chicken mix to one side and allow to cool slightly.

Lightly beat 5 eggs in a bowl

I put the dish I’m going to cook this in on a baking tray as it gets quite full, means when I lift it into the oven any bits that spill over are on the tray not me or the floor or the oven.

Mix the cooked pasta and chicken mix pour into a sandwich tin.  It should almost fill it.  Add the beaten eggs slowly.  The egg mix will bind everything together so let it settle as you pour it in.  Sprinkle with grated cheese if using.

When your dish is full put in the pre heated oven and cook for 35-45 minutes or until golden brown

Slice and serve.
