Chocolate strawberry scan bran muffins

This super quick and easy recipe makes 7 muffins (I know there are six in the photo - I already ate one when I took it – the shame) and come in at only 2 syns each when using your scan bran as your heb if not they are 2.5 syns each


Ingredients
For the cake:
5 scan bran
3 eggs beaten
1 tablespoon golden syrup
1 tablespoon cocoa powder
½ mug sweetener
Few drops strawberry essence

Topping 1:
Chocolate spread (Nutella will work too but the chocolate one doesn’t add the nut flavor)

Topping 2:
75g fat free quark
1 tablespoon sweetener
1 tablespoon (or sachet) white chocolate options

Decorate with strawberries

Method:

Soak the scan bran in boiling water until soft.  Drain off the excess and mash up to crumbs.  Add all the other ingredients and mix well. 

Pour into silicone cupcake cases and cook on Medium for 5 minutes.  My microwave has temp options and I picked 600 which was fine, just keep checking it as you want it to be springy but don’t overcook it or it turns into a hockey puck!

While it’s still warm dollop a little of the chocolate spread/Nutella on the top of each bun and spread it around, if you do it while the bun is still warm you use less and it spreads much better (you can miss this step out if you like and save the syns but I think it gives the bun a much richer taste and looks better)

Leave the buns to cool

Mix your quark, white chocolate options and sweetener together and put in a piping bag or small bag with the corner cut out.  Pipe a circle on the top of the muffin and pop a strawberry on top.

Ready to serve!
