Chocolatey Oaty Banana Cookies

These cookies are really quick and easy to make plus they can be tweaked to include pretty much whatever you fancy.  I find that they’re denser and more chewy than a lot of my usual diet cookies so you feel like you’ve had more of a treat.  Admittedly they’re higher syns than my 1 ½ a syn brownies but sometimes you need something different and these go perfectly with a coffee as an afternoon pick me up.

I made chocolate banana walnut and they were absolutely delicious.  All up the cookies were 2 syns each or 3 if you’ve already used your heb.

Ingredients:

40g oats (heb)
1 tablespoon Nutella (4 syns)
1 banana (4 syns per 100g)
1 egg
Walnuts (or sultanas/choc chips) – optional (add syns if using)

Method:

Microwave Nutella for about 20 seconds to soften it

Add the oats and mix well

Beat the egg and add to the mixture

Squash your banana and add to the other ingredients, stirring everything to make sure you have everything evenly mixed.  If you want to add walnuts, sultanas or chocolate chips add them now and stir through 

I put these in individual silicone bun cases to cook, they hold their shape better and it stops the Nutella melting away!

From these ingredients I get six cookies and cook them at 180 or gas mark 6 for about 15-20 minutes or until springy and firm on the top.
