Courgette & Cheese Tots

Sometimes I get sick of having veggies and really want smoething different, these are really fun and a great way to get kids (and picky adults!!) to eat greens!  Well, you’d hardly know they were healthy as they have breadcrumbs and cheese in so pretty much anyone will love them!

Depending on your HE’s for the day they can be syn free, but if you’ve had your HEA and HEB the tots are about ¾ of a syn each depending how many you make, as you can see I made 14 biggish tots but you can make them slightly smaller if you prefer.  I've put the syns below so you can work anything out.

Ingredients:

2 large courgettes coarsely grated
1 large egg lightly beaten
1/4 onion finely grated
40g reduced fat mature cheddar cheese grated (6 syns or your HEA)
2 medium slices Warburtons Wholemeal bread minced into breadcrumbs (5.5 syns or your HEB)
1/2 teaspoon ground garlic
Pinch of salt and pepper to taste
Frylite

Method:

Preheat the oven to gas mark 7 or 200 degrees

Grate the courgette onto a clean tea towel and wring out all the water, a load will come out…keep going until you can’t get any more (an excellent stress buster!)

In a bowl combine all the ingredients and season with salt and pepper to taste, the mixture should be quite moist but firm enough to shape..like this:

Shape into 'tots' or little balls
Shape the mixture into ‘tots’ or little balls – whichever you prefer – and place on a baking tray that you’ve lightly sprayed with frylite

Bake for 12 minutes and turn over, then cook for another 6-8 minutes or until golden brown

Serve immediately
