Garlic Fry Lite
Chicken stock
Julienne the courgette(s), I used a potato peeler at first
but found a proper julienner in Debenhams, clearly the potato peeler was more
than adequate but this makes the pieces look better!
Cut the baby leeks into julienne's as well, make a little
pile with the courgettes.
Add crushed garlic to taste
Stir fry quickly with garlic Fry Lite and when the
vegetables are starting to cook through add the chicken stock, turn down the
heat and simmer gently.
Don’t let the
veg get brown, it’s just a quick stir fry.
You probably only need to simmer for a max of 5 minutes, the
courgettes and leeks should just be cooked through, not sloppy and limp. Use them as the base for any meal that you’d
use spaghetti. I especially like this
with salmon and ginger stir fry, chilli, chicken and pepper stir fry – whatever you
fancy.
