Crustless Quiche

I thought the whole idea of a crust less quiche was megh, I mean what’s the point if it’s not in a yummy pastry shell right?  Well I was looking through some old SW magazines and decided to use a recipe as inspiration, change to my taste and create a bacon and roasted Mediterranean veg quiche.  The result?  Absolutely delicious, maybe more like a frittata but whatever you want to call it, it’s good!

There’s cheese and milk in the quiche (obviously) and I've about three days of HEA but you cannot eat this all to yourself, ok, maybe you can but you’ll be poorly or pop so I’d say this is perfect for dinner and to have for a couple of lunches.  You can syn the cheese if you’re not using it as your hea (it’s about 35g – 6 syns roughly depending on the cheese).

Makes 6-8 slices depending how hungry you are

Ingredients:
8 large eggs
200ml skimmed milk
100g cheese (grated) - you can use less if you want, I wanted a cheesy, decadent quiche
10 bacon medallions
2 cups roasted Mediterranean veg
Italian herbs

Method:

Pre heat oven to 180 degrees or gas mark 6

I wait to do this til I have leftover roasted veg, you can use whatever you want but I like my quiche to be full so don’t be afraid to add loads.  If you want to make the roasted veg now all you do is roughly chop peppers and red onions and spray with garlic fry light.  Cook at 180 for 30 mins, give the veg a turn and spray again cooking for another 15-20 mins. 

Dry fry the bacon, cut into bite size pieces and set to one side to cool

Crack all eight eggs into a clean bowl, add the milk and Italian herbs and whisk until everything is combined

Add the grated cheese, bacon and veg and mix again

Crust Less quiche ready for the oven
 Pour mixture into a round sponge tin – do not use one with a removable base as the egg will leak out the bottom! And cook for 30-40 minutes until set in the middle

Cook until set and golden on top
 Leave to cool in the tin for a bit and then turn out, serve with a side salad and maybe some sw chips!

Serve warm with side salad and maybe chips!
