I find that for me bread is a no-no while I'm on a diet, and anyone that knows me knows how hard that is! I've been making these super easy curry muffins for a while now and have tried and tweaked other online recipes to make what I think are the tastiest ones yet.
Recipe:
1 tin syn free chickpea dahl (I get mine at Morrisons)
1 packet Morrisons Piri Piri rice
3 eggs
curry powder to taste
Pre heat oven to Gas mark 6 or 180 degrees
Make the rice up per the packet instructions but add a decent amount of curry powder
While the rice is cooking put the chickpea dahl in a bowl
Crack the eggs into the dahl tin and lightly beat
Add eggs to the dahl
When the rice is cooked I give it a few minutes to cool slightly
Add to the dahl/egg mixture and give a stir
Ignore the fact it looks like a disgusting mess
Divide the mixture into 12 cases or a non-stick muffin tin (spray with Fry Lite first if using the tin)
Some people make this into a loaf but I never do, the muffins cook faster, more evenly and are better for portion control!
Bake the muffins for about 30 minutes, they don't rise much but they do go a golden brown
Leave to cool and then pop out onto a wire rack
Curry muffins freeze, you can nuke and use straight from frozen too! I often use them for a quick lunch with some sort of salad and our SW group swear by them to lose weight!
