Diet Coke Chicken

This syn free meal is so easy to do and on this occasion I used only things I had in the house/freezer – including frozen chicken.  It took about 20 minutes to bubble down and was sticky and flavorful.  I’d highly recommend.  
 
Note: I’ve seen this about for years and am sure there’s loads of different ways to cook it but a common complaint I’ve seen is that it doesn’t thicken.  Instead of passata that lots of people use I went with tomato paste to give the flavor without adding liquid and it worked perfectly.  You can always add a splash of water if you think it’s needed, better that than its runny.
This feeds two hungry people!

Ingredients:

3 chicken breasts
1 large red onion chopped (or frozen)
1 can diet coke (I used ginger but that’s not to everyone’s taste!
Tomato paste
2 oxo cubes
2 garlic cloves
Worcestershire sauce
Few drops of liquid smoke (if you have it)
Garlic fry lite

Method:

Chop the chicken into cubes and stir fry with your garlic fry lite, garlic and onions until lightly browned.  Don’t worry about cooking it trough at this stage, it’s probably better if you don’t as it’s going to be in the sauce for a while

Once the chicken is lightly browned add the two crumbled oxo cubes and make sure the chicken pieces are evenly covered

Add the can of diet coke and a decent squirt of tomato paste (I’d guess about a tablespoon)  as well as the liquid smoke if you have some (not too much!) and stir through

Bring the mixture to the boil and then reduce and simmer for 20-30 minutes until the chicken is cooked through and the sauce has reduced by about half

Serve immediately with boiled rice and veg
