Hot Cross Buns

These hot cross buns are a variation of the ever popular Baked Oat Muffin, they’re only a syn each that’s the dried fruit and icing sugar, they’re more like ¾ syns but that seemed silly so I rounded up to a syn just to be sure.

These baked oat hot cross buns taste just like the real thing, citrus-y and fruity…very, very worth a try!

Ingredients

40g oats (HEB)
165g Muller Light fat free Lemon Greek Style Yoghurt
25g Dried mixed fruit (3.5 syns)
1 egg
1 heaped teaspoon ground mixed spice
Zest of one orange (or a few drops of orange essence)
Tablespoon icing sugar drizzled between all the buns (I’ve added 2.5 syns which is way too many)

Method

Pre heat oven to 180 degrees or gas mark 6
Mix all the ingredients, make sure that everything is evenly divided
Divide the mixture between six muffin cases, I always use silicone muffin cases as the cakes don’t stick
Bake for 35 minutes or until lightly golden
Leave to cool
When the hot cross buns are cooled make the icing sugar and drizzle a thin cross onto the top of each bun
