KFC style chicken

I class this recipe as syn free, before the tweak police come breaking down the door I know that using the smash for a purpose other than smash is a tweak and you’re supposed to syn it but well, to be honest I don’t.  I’m not stuffing half a field of potato puree into my mouth and for me not synning this makes no difference.  If you would like to please feel free, you can syn it the same as you would if you were to use the same quantity of flour.

Ingredients:

4 chicken breasts cut into strips or cubes
3 eggs
1 packet original smash
2 chicken oxo cubes
2 tablespoons paprika
2 tablespoons garlic powder
1 tablespoon cayenne pepper
Pinch salt & pepper
Frylite

Method:

Preheat the oven to 180 or gas mark 6
Cut the chicken into strips or chunks, whichever you prefer
Beat the eggs lightly in a small bowl
Mix all the dry ingredients together and put in a separate bowl
Dip the chicken pieces in the egg, then the dry mixture, back into the egg and back into the smash mixture so it’s double coated.
Place on the baking tray
When you have all the chicken on a grease proof paper covered tray spray it all with frylite (I used the garlic one)
Cook for 20 minutes and turn, cook for another 10-15 minutes depending on the size chicken chunks you have
Serve immediately with gravy, beans, sw chips and corn!
