Pizza Bites

I’ve put the syn value of the items below in with the ingredients as it depends what you’ve had for your hea and heb that day to how many syns you count these as. 

I calculated a portion as three pizza bites and had the tortilla and cheese as my healthy extras for the day so I just made them 1 syn each.  They could be more if you already had your bread products or cereal for the day.

Ingredients

1 wholemeal wrap (makes 3-4 bites) 8 syns – I count this as my heb even though strictly I’m not supposed to.  You could also use the Kingsmill sandwich thins and cut up as they are free using your heb
Passata with basil
40g reduced fat cheese (hea or 6 syns)
Dried Italian herbs
Pizza ‘toppings’: bacon medallions, sw meatballs, syn free sausage, onion, peppers, mushrooms...whatever you have and like!
Fry lite

Method
Pre heat oven to 180 degrees or gas mark 6

Lightly spray a muffin tin with fry lite

Select a small cookie cutter that will cut out circles the same shape but just slightly bigger than the bottom of your muffin tin.  Cut your tortilla or bread thin with the cookie cutter and line your muffin tin so the ‘base’ is slightly like a cup to hold the filling.  You don’t want the bread all the way up, just enough to make a lip

Using a teaspoon, layer a dollop of passata on the base, filing the cup area.  Smooth with the back of the spoon so it covers the whole base

Add your fillings…as much or as little as you like.  Remember if you’re using bacon, sausage or other meats that some need to be pre cooked!

Load pizza bases with your choice of fillings
Sprinkle cheese on the top, add a few dried Italian herbs and bake for 20-30 minutes until the cheese has melted and is golden brown and bubbling.

Serve immediately
