I know some people will count the use of Smash as a tweak but I don't, I'm not overeating it and I am using the syn free original version.
Ingredients
4 chicken breasts, diced (any visible fat
removed)
1 packet original smash
Salt/pepper/chilli flakes
1 teaspoon smoked paprika
2 eggs
1 red onion
1 green pepper
3 garlic cloves
1 red chilli finely cut
Soy sauce
2 tablespoons white wine vinegar
1 teaspoon syn free sweetener
Fry lite
Method
Cut chicken into bite sized chunks
Tip the packet of smash onto a plate, add a
good grind of salt and pepper, chilli flakes to taste and a teaspoon of smoked
paprika. Mix all the dry ingredients together
evenly
In a small bowl lightly beat the two eggs
with a little soy sauce (just a drizzle , maybe a teaspoon)
Get a baking tray ready and line with
greaseproof paper on spray with frylite
Pre heat the oven to 180 or gas mark 7
Coat the chicken chunks with egg, then
dredge through the smash mix until lightly covered

Place all the dusted chicken chunks on the baking tray
Continue until all the chicken is
coated.
Spray with frylite and put in the top of
the oven
This will need about 20-25 minutes, but
after 15 turn the chicken so it cooks on both sides
Next cut your pepper and onion and lightly
stir fry with the garlic, red chilli and additional chilli flakes if liked, I
used fry lite at first and then added a little water as I didn’t want the
veggies to get brown. Add a tablespoon
of soy sauce and give it a mix, this takes about 10 minutes over a medium heat
for the veggies to cook and soften
When the chicken is done tip into the
veggies and lightly mix through
In a small bowl add the sweetener to the
white wine vinegar so it dissolves and pour over the chicken mix leaving for
maybe 3-4 minutes to warm through, turning gently a few times to evenly
distribute
Serve immediately with rice or cauli rice
