Scan bran chocolate orange muffins

This mix makes 8 muffins.  If you use the scan bran as your HEB they are 1.5 syns each and if you’re synning the scan bran they’re 2 syns each.  
 
These scan bran chocolate orange muffins are moist and have a cake like consistency and is better, in my opinion, than the microwaved version I've tried.

Makes 8 muffins

Ingredients:

5 scan bran (5= HEB or 5.5 syns)
25g cocoa powder (4 syns)
5 tablespoons syn free sweetener
3 eggs
Few drops orange flavouring
Few drops salted or butter caramel extract/essence
2 tablespoon choc shot (4 syns)
Orange segments to garnish

Method

Pre heat the oven to 180 or gas mark 6

Break the scan bran up into a bowl and pour boiling water over it.  You want to soak but not drown them so cover with a little water spare, you can always add more.  The scan bran will absorb the hot water and when you crush with a fork will leave you with a soft breadcrumb type consistency.

In a separate bowl measure the cocoa powder, sweetener and orange essence.  Add the eggs and lightly mix until everything is evenly divided

Add the egg mixture to the scan bran crumble and mix thoroughly

Divide into 8 muffin cases; I always use silicone as I find the cake sticks to paper cases

Your muffins should look like this:

Bake for 25-30 minutes until spongy to the touch

Leave the muffins to cool, maybe 1/2 an hour and add a drizzle of choc shot, garnishing with fresh orange segments as you like.

Only 1 1/2 syns per chocolate orange muffin!
You can add a little more choc shot if you’d like them to be super gooey, it’s won’t make much difference to the syns when you’re dividing by 8 (2 per tablespoon)
