Scan bran popcorn muffins – 1 syn each

You’d never guess that these muffins are actually scan bran and popcorn, they’re really cake-y and nothing like scan bran is normally, basically they taste great!  The popcorn pretty much dissolves in cooking and you’re left with a quite dense bun.  Absolutely perfect if you’re missing that ‘proper cake’ to go with your cup of tea.

This recipe makes 8 muffins and the total syns is 7.5 for all 8 when you use the scan bran as your HEB, so basically 1 syn each.  If you used your HEB already, the scan bran adds 5.5 syns which makes 13 syns total or 1.5 each.

Ingredients:

5 scan bran (HEB)
30g syn free sweetener
3 eggs
1 teaspoon salted caramel flavouring
25g cocoa powder (4 syns)
1 x 17g packet skinny popcorn (I use Metcalf’s at 3.5 syns)

Method:

Soak the scan bran in boiling water – I break it up and just cover with the boiling water, don’t submerge it!  Leave it about 5 minutes and drain any excess water off, then mash it with a fork and you have a breadcrumb like consistency.

Add the sweetener, flavouring and eggs to the scan bran and mix well

Next add your cocoa powder and mix until it’s evenly distributed

Finally add your popcorn and one final mix through 

Divide between 8 silicone muffin cases

Bake at 180 or gas mark 6 for 25 minutes or until springy to touch on the tops 

Leave to cool and serve

You could make them look nice and mix quark with white chocolate options and a tablespoon of sweetener as icing and decorate…that’s for next time!
