These rocky road muffins are moist and have a cake like
consistency. The flavor of the scan bran
is still there but it’s now a more chocolate-y version. I like these although I wouldn’t want to eat
them every day. Then again the amount of
fiber in them I don’t think anynone should eat them every day!
Makes 8 muffins
Ingredients:
5 scan bran (5= HEB or 5.5 syns)
25g cocoa powder (4 syns)
5 tablespoons syn free sweetener
3 eggs
Few drops chocolate extract
Few drops salted or butter caramel extract/essence
2 tablespoon choc shot (4 syns)
12 mini marshmallows (1 syn)
Method
Pre heat the oven to 180 or gas mark 6
Break the scan bran up into a bowl and pour boiling water
over it. You want to soak but not drown
them so cover with a little water spare, you can always add more. The scan bran will absorb the hot water and
when you crush with a fork will leave you with a soft breadcrumb type
consistency.
In a separate bowl measure the cocoa powder, sweetener, 1
tbsp choc shot and essences. Add the
eggs and lightly mix until everything is evenly divided
Add the egg mixture to the scan bran crumble and mix
thoroughly
Divide into 8 muffin cases; I always use silicone as I find
the cake sticks to paper cases
Your muffins should look like this:

Bake for 25-30 minutes until spongy to the touch
Let the muffins cool for a while, I usually leave mine 30-60
minutes
Now it’s time to rocky road them!
Measure 1 tbsp choc shot and drizzle over the muffins
Next cut your mini marshmallow into quarters and the big bits
smaller still – I found this the most time consuming part of this bake!

Sprinkle the marshmallows on the muffins and you’re
done.
You can add a little more choc shot if you’d like them to be
super gooey, it’s won’t make much difference to the syns when you’re dividing
by 8 (2 per tablespoon)
