Syn Free Stuffed Mushrooms

Completely syn free and super easy to make, these are bound to be a go to dinner!
If you use cheese it can be either your Healthy A or synned depending on your day

Ingredients:

4 large mushrooms (I used Portobello)
3 Linda McCartney caramelized onion and rosemary sausages defrosted
½ cup cooked rice
½ cup chopped veg to suit (I used green and yellow peppers, red onion)
Garlic
Mixed herbs
Chilli flakes
Egg to bind
Garlic fry lite

Method

Heat the oil in a frying pan and cook the garlic and red onion until translucent, set to the side to cool slightly

In a bowl squash the veggie sausages until they’re crumbled.  Add the rice, chopped veg and cooled onion and garlic.  Add mixed herbs and crushed chilli flakes to taste. I used about ½ teaspoon of each, maybe a little more of the herbs.  

Beat the egg and add to the rice mixture, stir through as this is the binding agent so it doesn’t fall out of your mushroom!

Peel and take the stalks off the mushrooms and stuff with the rice mixture until it’s all used.  They should be very full...perfect for hungry days

Ready for cheese and the oven!

I added a small amount of cheese to cover the mushroom and stop the rice drying out, plus I really like cheese!  It was my HEA for the day so I don’t feel guilty either.

Cook at gas mark 6 (about 180) for about 30 minutes or until the cheese is melted and the rice mix hot throughout

Serve immediately with salad

** You could use a pepper instead if you don’t like or have any mushrooms, it would work just as well!
