Weetabix Cookies

These cookies are syn free if you use them as your HEB, if not they’re 1 syn each.  You can make loads of different flavours, I’ve put some below and added the syn value for the extras…the chocolate ones are especially good and at only 2 syns more for all 7 I can totally live with that!

Ingredients

2 weetabix
2 tablespoons syn free sweetener
2 teaspoons mixed spice

2 teaspoons ground ginger
Few drops orange essence
1 beaten egg
50mls milk

Method:
Squash weetabix so it's a powder
Add dry ingredients
Lightly beat egg with milk and orange essence
Mix together


I made ginger, ginger nut, cherry bakewell and chocolate at the same time!
Put in cookie sized dollops (you'll get 6-8) on grease proof paper and bake at 180 or Gas mark 6 for 10 minutes. 

Weetabix cookies ready for the oven!!
Flip the cookies over and bake for another 5-10 minutes or until lightly browned

 
Syn free Weetaboix cookies...

Different flavor ideas:

Chocolate: Add a tablespoon of cocoa powder to the dry ingredients which is 2 syns more per batch (but they’re good!)... Chocolate flavours:  Try adding orange, salted caramel or coconut essence to the chocolate cookies for different flavours

Ginger nut:  As main recipie above but add fresh ginger (chopped finely) and 15g roughly chopped walnuts (the walnuts add 5 syns to batch)

Fruit cookies:  Add 25g dried mixed fruit (3.5 syns).  I use mixed spice, ginger powder and salted caramel essence as well for a really tasty cookie

Cherry bakewell:  Add 25g roughly chopped cherries (1 syn) and almond essence
