As I said, I did not really like these muffins. Compared with my Weetabix muffins they’re
quite bland and I found them a little like cold, slightly sweet quiche. They weren’t horrible though and if you find
the Weetabix muffins too dense these might be your answer. Dipped in a syn free yogurt they were much
better!
For one serving
Ingredients:
40g porridge oats (check the Syn value if you’re on SW – I used
Tesco organic)
2 tsp lemon essence
2 tbsp sweetner
1 tsp ground ginger
2 eggs
1 lemon yogurt (any syn free variety)
Method:
Mix all the ingredients into a bowl
Pour into 4 muffin cases
Bake at 160 for 25 – 30 minutes or until golden brown
Bake until golden brown |
