It’s super straightforward:
Ingredients
Leftover chilli (my sw friendly chilli
recipe is here)
Courgettes
Grated cheese
Method
Pre-heat oven to gas mark 6 or 200 degrees
Cut the courgette in half to make your
boats, we cut the courgette from the middle to the edge, turned it round and
started at the middle and went to the other outer edge (if that makes sense)
rather than slicing in half in one long motion.
I think this way may be easier
Scoop the middle bit out with a teaspoon.
Stuff the courgette with chilli, I packed
it in firmly to make sure there was a decent amount in each portion and place
on a baking tray. I put mine on a nonstick
liner rather than risk them becoming one with the baking tray during cooking
Bake the courgettes for 20 minutes
Top with cheese and bake (on a sheet to prevent sticking!) |
Take the tray out of the oven and sprinkle
cheese on the courgette boats, return to the oven for a futher 10 minutes or
until golden brown and cooked through

Serve immediately with salad or cous cous,
I mixed my cous cous with roasted Mediterranean veg that I had left over for
extra veggies!
