Baking powder gives 0.25 syns for all six muffins so I’m classing them as syn free - saying 0.04 syns per muffin made me sound ridiculous
They’re probably a slightly lighter texture than baked oats, the cous cous being less dense than porridge oats but overall not a lot of difference. If you haven't tried baked oat muffins yet you really should! There are oads of variations to go at and I have them every day at work plus in the car when I'm travelling, the recipe and options are here.
Only thing I’d
say is they could maybe do with more flavouring than baked oats but that may
have been my choice of lemon and it’s slightly more subtle than almond or
salted caramel.
Ingredients:
40g cous cous
2 eggs
2 tablespoons syn free sweetener
1 Muller light (any flavor of choice)
½ teaspoon baking powder (0.25 syn)
1 generous teaspoon essence (your choice
of flavor)
Method:
Make the cous cous according to the directions
and leave to cool
When cous cous is cool, in a separate
bowl whisk eggs. Once whisked stir in
baking powder, sweetener and muller light

Add the cous cous to the egg mixture, divide
into six silicone muffin cases and bake for @30 minutes at 180 or until golden

I made lemon and blueberry using lemon
essence and 3-4 blueberries in each muffin (I don’t syn the cooked blueberries
as it’s such a small amount but please feel free to).
